Serves 6-8
2 rabbits (cut into joints) OR four pairs of Border Range hindquarters
100g melted butter
1½ cup finely rolled (processed) salted crackers to the consistency of breadcrumbs
Salt and ground black pepper to taste
- Preheat oven to 180C.
- Dip pieces of rabbit in melted butter and roll in cracker crumbs.
- Place pieces in shallow baking dish but do not crowd.
- Cover and bake 1 hour or until tender.
